ViaSat service is available on JetBlue (free) and most of domestic United flights (some of their aircrafts use GoGo) for a modest price (< $10 a flight).
We collect a lot of data and counters on these flights.
Whenever I am on such a flight, I open up windows to various tools and even ssh to the modem (via a very long double satellite hop path and various VPNs and firewalled paths!).
Your in-flight device is connected via standard WiFi and IP protocols - so you can pretty much do anything. Also, there are HTTP and TCP accelerators in the path, which will affect performance and measurements.
