But why?

This is pure hype engineering. A single satellite with  single nvidia card is now "data center"?
On the othef hand adding mord stellites and/or more nvidia cards would add no discernable gain on what amounts to a publicity stunt...

Which data really needs to be processed in orbit again?

nothing wrong with the engineering (which is supposed to push the
thing to the boundary, extend and make it at scale economically), and
the hype may come from the press, which we have often seen for decades
